Toddlers in the Kitchen

My 2 year old, Gavin, is constantly in the kitchen; whether it be to help or just to get into stuff. I find containers, food, spoons, pots & pans all over the house, all the time. haha
But it's hard to tell him to stay out of the kitchen when he's so curious. So I decided to make a Gavin Drawer!

We have a wall oven, so underneath the stove top are two large drawers, where I usually store pots and pans. Well, it was time for a change, so the bottom drawer is now Gavin's spot!

It will be easier to tell him to stay out of the other cabinets and drawers in the kitchen if he has his own little place he knows he can get into.

Items you might consider putting in your toddler's drawer/cabinet:

Their cups, spoons, plates and bowls
Small cookware (I put my smallest pot in Gavin's drawer)
Unused kitchen utensils
Cookie cutters
Play food
Place mats
Food containers used to preschool/church/play date snacks
Napkins
A couple Rags and Towels to clean up their messes

Not only does a space like this make them feel more independent, it teaches them to be independent and responsible. With Gavin's new drawer, he gets to set his place at the table, empty his belongings out of the dishwasher and put them away ('cause he can reach it now), ect.

Every time I turn around he's grown up a little more! It's kinda sad, but I'm very excited to be at this stage in our lives. :)

Get Your Home Organized in 52 Weeks

If you're like me, looking at your whole house and everything that needs to be cleaned, organized, decorated, ect. is very overwhelming. Thankfully, Home Storage Solutions 101 has put together a list of 52 weekly tasks to help us all get organized! This list makes it easy to break it down so in one years time you'll be able to look at your whole house and wonder "Wow! How did I get so organized." instead of "Wow, how did it get so disorderly...."

We're coming to the end of January, so I'm a little behind, but it's better late than never! :)
Some of the items on the list don't apply to my family, while others that are further on the list are high on my priorities list. My journey to order in the next 52 (well, 48) weeks is going to look a little different, but I'm still using this list for guidance.
I hope this encourages you to get organized, and realize that organizing doesn't have to be overwhelming!

Meals: Monday 1/16/12

Breakfast:
Gavin had blueberry oatmeal and I had a Blueberry&Banana Coconut Milk smoothie

Lunch:
Gavin had a peanut butter sandwich and grapes. I had a tomato sandwich with vegan mayo and onion, with some bell pepper strips on the side.

Snack:
Gavin had 1/2 banana and a small serving of almonds. I had blue born chips dipped in roasted red pepper hummus.

Dinner:
Gavin ate at his Meme and Papa's and I was tired and feeling like being lazy, so I just had some vegan mashed potatoes and bell pepper strips.

Bonus:
Gavin's snack, Tuesday 1/17/12: Avocado, tomato and apple

Powder Laundry Detergent

1.5 Cups Arm & Hammer Super Washing Soda

1 Bar Fels Naptha soap, grated

Inadequacies

I don't know about you, but I struggle with inadequacies and feeling like a failure CONSTANTLY!
I'm always trying to hold myself to a standard or level or perfection which is unattainable but somehow talking myself into believing that if I just try hard enough or long enough that it will happen. Sadly, not only do I try to hold myself to perfection in certain areas of passion or necessity but all areas of life. And I would get so discouraged when a piece of my puzzle went missing.
Well tonight my eyes were opened!

I have found empowerment........ in my inadequacies!

You're probably thinking "HUH!?" Haha. Understandable, as we are taught that inadequacies make us failures. But why do we believe this? It is our strength as well as our weaknesses that make us who we are. And in essence that makes us perfect.
Yeah, we're all sinners, we're not perfect. I know this, I share this. But that's not the level of perfection I'm referring to. Well, sorta. Let me explain.

I try to hold myself to a level of perfection that can only be attained as a perfect, sinless being. That is completely and utterly unattainable in this life. (I have a constant need for this reminder)
But God created us, as we are, inadequacies and all to be the perfect, one and only us.

Psalms 139

For you created my inmost being;
   you knit me together in my mother’s womb.
I praise you because I am fearfully and wonderfully made;
   your works are wonderful,
   I know that full well.
My frame was not hidden from you
   when I was made in the secret place,
   when I was woven together in the depths of the earth.
Your eyes saw my unformed body;
   all the days ordained for me were written in your book
   before one of them came to be.

Romans 8:28

And we know that in all things God works for the good of those who love him

God created us, everything we are and are not, for a purpose. He allowed us to have inadequacies to fulfill His purposes in our lives and others'.
I'm learning to, instead of accept my inadequacies as failures to, find empowerment through them!

II Corinthians 12:9-10

But he said to me, “My grace is sufficient for you, for my power is made perfect in weakness.” Therefore I will boast all the more gladly about my weaknesses, so that Christ’s power may rest on me. That is why, for Christ’s sake, I delight in weaknesses, in insults, in hardships, in persecutions, in difficulties. For when I am weak, then I am strong.

I hope you find comfort and empowerment, strength, in your inadequacies. And if you're like me, tying yourself down with the ropes of self-loathing, disappointment and unattainable standards or perfection, please hear me when I say: You are going to miss out on life and the awesomeness of finding out who YOU are.

You are too wonderful to miss out on life because you're caught up on standards that don't truly exist.

Think of it this way: Perfection is a flat, poreless surface (one with no flaws). "Inadequacies" are curves, lines, physical and visual interest.

So ask yourself, would you rather be:

I've personally come to terms with (most of) my inadequacies and weaknesses and much prefer to be the garden. :)

Comprising: Raw/Vegan vs. Meat/Dairy

As wives and mothers our greatest desire in life is to do/give the very best to our family and take care of them. But often we are faced with cross roads. We must choose between two (or more) directions and often based solely on faith. No matter how much we research and seek answers, we can't know everything. And we have to rely on our instincts and faith in God's will for us/our family.

As you may know, because I've been blogging about it, we are on a journey to veganism. And eventually hoping to go completely raw. As hard as a decision like this can be, we made it for the sake of what we thought was most beneficial to our family's health.

Well here are my cross roads:

Raw/Vegan: Has a lot of health benefits and forces you to cut out processed sugars, excess salt, chemicals, hormones, meats, ect. but can also cause deficiency in some key nutrients, like B12.

Meat/Dairy: We are taught that we NEED meat and dairy for key nutrients like calcium and protein, however, consuming meat and dairy causes our bodies to become acidic. Consumption of meat has been linked to MANY diseases.

So I keep asking myself, "What is really the best thing for me and my family!!?" and I can't seem to find THE right answer. I can see benefits of both diet-lifestyles but I can see possible issues with both as well. So what do I do?

Well, Jason and I have talked about it. We've decided to go almost completely raw for the rest of January 2012 to naturally detox/clean ourselves. No pills, supplements, ect. And unless we see a significant, undeniably-because-of-a-vegan-diet health changes/benefits, our games plan will be:

We will eat a primarily raw/vegan diet and occasionally have some cooked/non-vegan things.
We still plan on cutting out cows milk and substituting it mostly with almond and coconut milks. We will OCCASIONALLY eat some meat and dairy, but only from local/organic/grass fed/free range farms. Cheese will be at a minimum as it has a lot of fat and calories and few nutrients (and hurts my stomach).
Jason loves meat so his diet will vary slightly, but Gavin and I will not consume beef or pork/red meats, only chicken and fish - and again, only occasionally. Baked goods will be a treat. Snack foods like chips, crackers, ect will be at a minimum.
Though I want to be on a primarily raw diet, we will still eat rice, beans ect. Unsalted nuts. Those type of things.

So that is our game plan. It may change as we see fit, however. Being a parent is hard. You think of things you never considered before. Every choice I make effects my son and trying to make ALL the right choices can be overwhelming. But I'm learning to give myself room to learn and grow and that I don't have to get it all right the first time.
We as people change and grow, as do our needs and what's best for us. :)

I'm still feeling a little like "is this what's best!?" but I'm giving it to God and trusting that He will be faithful and keep us safe as we try to follow Him/do what's best for our family :)

Trust in the Lord, and do good;
dwell in the land and befriend faithfulness.
Delight yourself in the Lord,
and he will give you the desires of your heart.

Commit your way to the Lord;
trust in him, and he will act.
He will bring forth your righteousness as the light,
and your justice as the noonday.

Pre-Workout Smoothie

Tuesday 1/3/12: Pre-Workout Smoothie

1 – 1 ¼ Cups SO Delicious Sugar Free, Vanilla Coconut Milk (50-63 calories)

½ -3/4 Cup frozen, sliced Strawberries (20-30 Calories)

½ Cup frozen Blueberries (45 Calories)

2 Tbls. Groud Flax (70 Calories)

Totals < 210 Calories

Blend together in a blender until you reach desired texture.

Makes 1 Large serving or 2 small servings.

*Note: If switching from a typical American diet, you may want to omit the ground flax to begin with for a bit smoother texture/consistency. Otherwise, go for it!

Journey to Veganism: Dinner & Dessert 1/1/12

For dinner Sunday, January 1st, 2012

Gavin had a Boca Chik'n Pattie on an Arnold's 100% Whole Wheat Flax & Fiber SanwichThin with a very little bit of ketchup and some lettuce.

Jason and I had a mixed salad, homemade hash browns (thinly sliced potatoes cooked over med. in coconut oil, seasoned with a little sea salt and pepper) and a mushroom "steak" (cooked on med. in a little coconut oil, seasoned lightly with sea salt and pepper)

And for dessert, we all shared a little Organic SO Delicious Dairy Free Chocolate Velvet "ice cream" YUM!

Cheese Burger Muffins

1/2 lb ground beef
1 small onion, finely chopped
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup ketchup
3/4 cup milk
1/2 cup butter or 1/2 cup margarine, melted
2 eggs
1 teaspoon prepared mustard
8 ounces shredded cheddar cheese

Preheat oven to 425f
In skillet, brown beef and onions (I added a little Italian Seasoning to this)

In bowl mix together dry ingredients, set aside (I used half All-Purpose Flour and half White Whole Wheat Flour)
In another bowl, mix beef mixture, ketchup, mustard, eggs, milk and butter (I used a little less than 1/2 cup of Olive Oil) Combine completely.

Slowly add flour mixture to wet ingredients. Combine fully. Fold in cheese.

Bake mini muffins for about 10 minutes and large muffins for about 15 mins.

(double recipe made 44 mini muffins and 18 large muffins)

Delicious Pancakes (Vegan)

Delicious Vegan Pancakes by Jessica

1 Cup Flour (White or Whole Wheat)
1/4 Cup Ground Flax (or substitute with 1/4 cup of flour)
1/4 Tsp. Sea Salt
1 1/2 Tsp. Baking Powder
1 Tbls. Raw Cane Sugar
1 Tbsp. Agave Nectar (or omit cane sugar and use 2 Tbsp. Agave)
1 Tbsp. Olive Oil
1 - 1 1/4 Cups Water
Cinnamon to taste - Optional
Coconut oil to grease pan/skillet

Bring skillet to medium heat.

Sift together dry ingredients (flour, flax, salt, baking powder, dry sugar, cinnamon)
Stir in wet ingredients (agave, olive oil, water)
*The mixture may be really watery at first but will thicken greatly, so don't be alarmed if your batter resembles soup initially

Grease your pan with coconut oil (amount will vary depending on the size of your pan. Just don't over grease. While coconut oil is beneficial to your health, like all things, too much can be bad for you ;)

Cook on first side until you see the edges browning and bubbles forming on the top of the loose batter. Flip and cook on the second side until it releases with ease and both sides are golden brown.
*Flipping should be easy (the pancakes shouldn't be falling apart or melting off your spatula)

Serve with 100% Pure Maple Syrup and ENJOY!

*Keep in mind when serving this dish that it's not nutritionally sound on it's own. I suggest pairing it with some fresh fruits and/or veggies and a glass of vegan milk. :)

20 in 12 for 2012!

As you may have guessed by the title, this is my list of 20 goals for the next 12 months.

I was inspired by Lori over at Montessori MOMents for her 101 in 1001 goals list from earlier this year.
I started to recreate my own 101 Goals list, but while I enjoyed her list, I didn't think a list like that was quite right for me. So I modified it :)
She listed things from projects, to family vacations, to daily activities. I'm working on a personal/family daily schedule aside from this goal list so I decided to keep this on more of a weekly-monthly basis.
Mind you, these are nothing extravagant, but it's a start. And it's a great idea to set goals for yourself, however big or small.

Below you can see MY 20 goals for the next 12 months. Hopefully you will be inspired and this will help keep me encouraged and on task :)

So here we go, in no particular order, my 20 in 12 for 2012!

Homeschooling

* Create a complete learning center/Prepared Environment room or area /household
* Take a field trip to the Zoo
* Take a field trip to the Museum of Life and Science
* Take a field trip to a farm
* Start and manage a garden

Marriage

* Complete a marriage study/devotional together
* Go OUT on a date (at least) once a month 0/12

Personal

* Complete (at least) one craft project a month 1/12
* Switch to all natural hair care
* Switch to all natural make up
* Switch to all natural body/skin care (wash and lotion)


Household

* Create a complete learning center/Prepared Environment room or area /homeschooling
* Organize and decorate the Laundry Room
* Repaint the Kitchen
* Organize and Decorate Master Bedroom
* Organize and Decorate Master Bathroom
* Make pillows for Living room
* Make curtains for Living room and Kitchen
* Paint Living room
* Build shed for extra storage
* Reorganize office

It's hard to believe that 2012 is just around the corner! But we say that at the end of every year, don't we? haha
I have to admit, I'm really looking forward to 2012 and all the positive changes it is going to bring.

WHY I'm Changing and WHY I'm Sharing It

I'm still awake here at 10:45p, even though I was ready to go to sleep at 7:00p due to a horrible headache. But I haven't been able to fall asleep because of it (the headache) So I finally broke down and took some medication for it, hoping this will be one of the last times ever! :)
That said, I wanted to turn my pain into inspiration, so here I am (headache and all ;)

I know a lot of people, the majority, have a hard time understanding why someone would choose to go vegetarian, much less vegan or raw (as we are doing/aspiring to)
But we are, and in short, this is why:

My son. My husband. Myself. (and any other children we might call ours in this life.)

It's easy to look down on something one doesn't understand. Many people are so misinformed/undereducated about food/"diets"/lifestyles yet give so many opinions on the matter; opinions that have been ill-formed, uninformed or hardly formed.
That said, this post isn't about respecting our choices. I just want to put it out there that I've been considering carefully this transition and educating myself to make such a decision. And I do, indeed, feel it's best for my family- and my husband is on board.

So I come to you, with a splitting headache, to tell you WHY I'm choosing this lifestyle, over eating meat, dairy, sugar, ect..
1) I get horrible headaches and I get them often.
2) Headaches, fatigue and other issues get in the way of every day life, cleaning, ect.
3) I have no doubt that the food I've been feeding my body for the past 21 years contributes to my spells of depression (lasting a day to months at a time)
4) And most importantly, all these health issues, though they may seem small compared to diabetes or cancer, are getting in the way of me being a wife and mother.

I've been letting food, the wrong foods, hinder me from being the best wife and mom I want to be and know I can be.
My husband loves to spend time outside being active, I don't... I don't like exercising anymore because I'm always too tired.
On top of crazy work schedules, the constant fatigue makes it very hard to be intimate with him.
The house isn't his oasis most days as I don't have the energy to keep it clean.
Gavin is losing out on a mommy because I, at 21, don't have the energy to keep up with him. This seems SO wrong to me!

I wanted to be a young mom so that I had the energy to keep up with my kids and then had the time to be with my husband once the kids were grown. At the rate I'm going, I'll achieve neither; while I've been slowly forfeiting life! Well, NO MORE! I'm ready to make the change that's going to change my life, and the life of my family, for good! :)

An argument, or concern, my husband had when we...I first started researching and considering the vegan/no refined sugar diet route was that he didn't want Gavin missing out on "special foods" (candy, cakes, cookies, soda pop, ect.) After sharing some of my findings with him and expressing my concerns, as thoroughly as I could, he realized where I was coming from. We both decided that we would much rather Gavin, and ourselves, "miss out" on some food than miss out on life!

While I may feel like humans really shouldn't consume animal products, I understand that most people do not feel that way and wont change. I don't EXPECT you to change.
My purpose in documenting our journey to transition, recipes, successes and failures in it all is to hopefully make it that much easier for those who are interested in venturing into veganism/raw foods... or just a healthier lifestyle than the one they're currently leading.
That said, even if you'll never be willing to let go of your cow's milk or steak, there will be a lot of good information. So take it for what it is and apply what you can/what you feel comfortable with.
I'm just hoping to make the idea of letting go of animal products seem less intimidating and much more simple for the average person. :)

Daily Blog 20: Preparations and Christmas with Jason's Parents

Friday 12/23/11

Gavin is 25 months old today! So hard to believe. He's growing up so fast! :)

So, today has been a bunch of cleaning to get ready for company tomorrow morning, a last minute grocery run and Christmas with Jason's parents.
We got a grill cover.. for our new grill! :) I got a cute cookie jar, a candle and couple other things.
Jason got some shaving cream, tums (LOL) and a canning starter kit (which we're both really excited about!)
And Gavin! He got a tricycle, a tractor ornament, and a play workshop!
(We all had some other small things here and there, but those were the big, fun things!)

Well, I'm gonna head to bed so I can get up, finish laundry and make a bunch of pancakes!

Daily Blog 19: Busy Days

Wednesday 12/21/11

LATE Tuesday night/early Wednesday morning (like around 12 and 1a) Jason and I heard a loud pick-up truck driving up and down our road repeatedly. We figured they were either "scoping" or spot lighting (which is where the hunt for deer at night using a spot light to confuse the deer for an easier kill - which is illegal) So Jason called the Sheriff. The truck had parked a little ways down the road and had their lights off. As few minutes after calling the Sheriff drives in front of our house and the truck takes off. ... the Sheriff squealed tires turning around and went and busted the guys. haha

I had to work again from a little after 8a until 3p. The lady I worked for got us a box of chocolates for Christmas which was really sweet, and they were very yummy!
Like most Mondays and Wednesdays, as soon as I got home from work Jason had to leave for his job.

Gavin was in a weird mood again so I didn't get much of anything done, even though I was actually in the mood to. Figures. I put him to bed early because he was so fussy, and of course, I got sleepy too.

Otherwise, there really wasn't much that happened...

Thursday 12/22/11

Today has been busy! I needed to go grocery shopping and my sister went with me, which of course makes it take so much longer because we spend so much time laughing and being crazy. haha

We went to CVS 'cause I was looking for something to finish a Christmas gift but they didn't have it. (I've been looking and can't find it..) But I got Jason a little something for Christmas (nothing special, really)
Then ran into Food Lion 'cause they had some mixed nuts on closeout, and they're yummy!
I also had to get some juice, Silk nog, ect.
Then we went to Ross where I got Gavin a couple books for Christmas.
Lastly, we went to Whole Foods where I got the majority of my groceries and we also bought some lunch from their food bar.
I dropped Amanda off at her place (it was pouring rain) then headed home. Gavin's MeMe was watching him 'cause I was running late and Jason and to leave to work.

A little while later, we headed back to mom and dad's house to go with them to their churches Christmas service. It was really good. You should be able to find it HERE

Now I'm getting ready to get some chores done while I wait for Mr. Jason to get home from work. Long day tomorrow in order to get ready for Saturday's brunch. :)

Daily Blog 18: Christmas Tree

Tuesday 12/20/11

I set up the Christmas tree Sunday night while Jason was at work. We couldn't decorate it Monday because I had to work and as soon as I got home Jason had to leave. So we finally had some time today, Tuesday, to decorate!

Jason left for work just before 3p. I still had a headache. Gavin decided not to go down for a nap =\
Besides washing some laundry, today has been kind of a lazy day.
Gavin ended up falling asleep for a "nap" around 5:30p @.@ and I couldn't get him to wake up... so he finally woke up on his own at nearly 7p! haha Crazy boy. Oh well. So we ate dinner (a spinach, mushroom and rice dish I made) Gavin watched a little bit of Veggie Tales and I put him down for bed just before 9p - he didn't fall asleep 'til just a minute ago (it's nearly 11p)

He has done really good potty training today. He's getting where he'll go to the potty by himself, mainly to poopy (or "Wow" as he calls it. haha) but we're getting there. :)

Well, I think that's about all that happened today. Jason should be leaving work soon. I need to make the bed and get to sleep. I have to work in the morning, but then I'm off 'til next Wednesday :)
I just pray I don't wake up with the same headache I've had since yesterday evening....

Daily Blog 17: LONG day!

Monday 12/19/11

I got up early, because I had to work. I worked from about 8a-3p. I got home and Jason left for work. Once Gavin woke up from his nap, we got ready and left. I needed to get a couple things to finish some projects (didn't find what I needed, however) and get some groceries, as well as a couple other errands.
We pass the road my parents live down on our way to town. Gavin is getting smart enough that he remembers where people live. So we're heading to town, before you can even see the road, he says, "Lizzie! See Lizzie." (his cousin) haha
I had to run other errands first. He got so upset, 'cause he wanted to see Lizzie so bad! I promised we'd stop back by to see her after I was done running errands.
So I got done what I needed to and we headed to my parents house.

We ended up staying way later than originally anticipated. But that's okay, 'cause we don't really get out of the house all that much. :)

We got home around 11p, I think. Late! haha
Gavin still wasn't ready to go to bed....

I had a song on my mind, heart and tongue all night.. absolutely beautiful too:

Jason finally got home from work around 12a, or so. I cooked him a little something for dinner since he didn't have time to eat at work (he's a mechanic, so he can stay pretty busy some nights. Yes nights, he works 2nd shift) I actually made him a "hot dog" sandwich... but they were soy 'hotdogs' (vegan) He actually liked them! :)
Finally, we spent a little family time together... then the boys spent some time together while I tried blogging; which was a total fail, 'cause I was so tired I could hardly see straight. haha

We all went to bed, at nearly 1a. I had a headache for several hours that evening but thankfully was able to pass out almost immediately. haha

It was a long day, but a good day indeed!

Saturday 12/17/11

Since Michael, my younger brother, had JUST gotten home from.... over there.... Carrie, his wife, was planning on flying out Sunday to go be with him, after her graduation.
Surprising us all, Michael had flown into town to see Carrie graduate nursing school (on Friday) and then come over Saturday to see all of us.

After the Parade (which you can read about HERE) we went home so Gavin could get a nap. Jason took a nap too. haha Once they woke up, we got ready and headed to mom and dad's house to see Michael and Carrie!

Jason's day off was full of working on the barn. Him and his dad (Rickey) were up on scaffolding repairing the roof.

One of Jason's high school friends, Brian, and his son Blaze, stopped by to hang out for a bit.

Brian helped Jason and Rickey with the barn and Gavin, Blaze and I played on the playset and cooked lunch. Gavin's 2 and Blaze is 4 but the two of them got along perfectly! They both had a lot of fun and their was no fighting! :)

My sister-in-law Carrie graduated nursing school! And my brother who is stationed on the other side of the country surprised her (and all of us) by flying in!

We're VERY proud of Carrie for her accomplishments with nursing school and are rooting for her and she begins her career :)

We woke up early for our town's Christmas Parade. Jason's childhood best friend's mom, Nancy, hosts a brunch every year at her house, which is on the street the parade goes down. So we go over there to eat and hang out for a while then everyone heads outside to watch.

We got very little sleep that trip. It was quite exhausting physically and emotionally. There was a lot more going on than I can or want to go into, but it was just rough.

We didn't even stay as long as we were planning to because of all the stress.

(We left Monday night, I came home late Thursday night and mom came home Friday)

Finally home. Waiting for hubby to get home from work so I can finally get a much needed hug and kiss.
On a good note though, besides the not-so-good circumstances, I had a really good time seeing my grandad this week :)

The beginning of December I started learning about the milk and dairy industry and made the choice to go vegan. I even got Jason on board! But going vegan here at the Holidays? I know.. haha So for Jason's sake, we decided to wait until January 1^st, 2012.

Jason said he'd make the commitment for one month (all of January) and after that we may or may not start implementing dairy, eggs and/or meat again (but only from local farms- no more super markets)

Gavin's been a little pain in the booty today, but he made up for it when he started praying for dinner and said the whole thing by himself! ♥

Gavin had his 2 year check-up on December 6^th. It went really well. Unfortunately, he had to get some vaccinations – Gavin didn't like that :( But otherwise, he did a great job!

After his appointment we went to Ross. I found some stuff for home-school.

December 10^th, Gavin and I went out (about an hour away from home) to get a little shopping done. We went to Michael's to get some stuff for a little Christmas gift and get a wreath for the front door.

I tell you what...... Saturday drivers in December are IDIOTS! I don't care how many people are in a freakin' parking lot... if you're not rude and selfish it shouldn't take 30+ minutes to get out!

Expectations and Training Toddlers

I've recently realized that I was making myself and my family miserable by expecting too much; I had unrealistic expectation, especially of myself. You can read about that HERE as it will put the following into context.

While we all have different parenting styles and tend to stand by our methods, it can be very helpful, especially in times of questioning our parenting, to hear someone elses' perspective. I hope you find this helpful.

I want to talk briefly about expectations as it pertains to training toddlers.

I was stuck on an unrealistically-high-expections method of parenting. While I gave Gavin "atta boys" for good behavior and such, I focused on his misbehaving just as much. This may not seem uncommon or like a big deal, but I found with my mind set, it is a problem.
Even with the atta boys, I'm finding it counter-productive to be spending equal time correcting him.
No wonder he keeps misbehaving; he's getting an awful lot of attention for it! And when I give him attention for misbehaving, what do you think he does but keeps misbehaving.

Don't get me wrong, children need to be corrected, that's part of our job as parents. But my expectations were too high. When I started correcting him for almost everything he did wrong and he kept disobeying I became angry. I found myself getting so upset that I began yelling.
I hate to admit it, but the past couple of days have consisted of very little gently explaining things to him and a lot of yelling. I don't want to be that kind of mother!

The approach I've taken today, that seems to be working, is correcting him once, depending on the issue, and then ignoring the bad behavior. And praising him for good behavior and obedience.
I'm finding it to be a lot easier to stay calm while ignoring him when he's doing wrong (as he eventually stops because he's not getting the attention) than it is to stay calm when I'm correcting him over and over again and him continuously disobeying me (because he is getting the attention).

Like I said, there is a time to correct our children and explain things to them - especially on issues that they really don't understand - but there's also a need to realize when it's better to ignore them and stay calm than continuously correct them until we lose our cool.

Lastly, there is no "right answer" to parenting. Trust me, I've searched everywhere, with no such luck. haha
It's a journey, and a long one at that.
But we cannot allow ourselves to be crippled by the fear of screwing them up. Rather we can simply do our best with the hope of a bright future.
We also need to realize that we have no control over anyone or anything, including our young children.
I think we often feel like we need to control toddlers into making the right choices, but just like with teenagers or young adults, we can't make them obey. We can simply set an example and lead them in the right direction.
They're their own little people with their own little wills :)

I hope you realize, too, that expectations only lead to disappointment but hope produces a joyous life!

Unrealistic Expectations make for a Miserable Home

Part of me wants to skirt around the truth right now and act like I'm fine and have got everything put together, but I know that's not helpful to anyone.
So I'm here to be honest, putting myself out there for potential judgement and hopefully extending some perspective that will help someone else.

I've been dealing with depression lately. Again. I've struggled with depression off and on since I was about 13/14 (so for the past 8 years or so)
I've noticed that most of the time my depression seems to be triggered by feeling inadequate, unworthy and like I should be perfect but can't seem to obtain it.
The last month or so lead up to me really struggling last night, feeling like there was no hope left in this life, feeling worthless and like I have no positive impact on the future, so what's the point? -Obviously those were/are all lies from the devil.
Even when I can't see it, God is using me, in one way or another - and I know this because I'm still here.
When my purpose has been fulfilled on this earth He'll take me home. And I say the same to anyone else dealing with depression right now.

If you are still here, it's because God is STILL fulfilling His purpose in and through you!

One of the areas I struggle with most is parenting/mothering. So often I simply feel inadequate. Through talking about it with my husband last night I realized that part of my problem is, my expectations are too high!
I have a TWO YEAR OLD, he's not going to behave perfectly all the time and I shouldn't expect for him to; and I certainly shouldn't feel like a bad or inadequate parent when he does have a melt-down or a temper-tantrum!
I need to relax and enjoy this time with him, fussiness and all, because before long he'll be all grown up.
And the way I respond to him now is preparing him for the way he responds to others and allows others to treat him in the future.

It really seems to be helping as Gavin hasn't acted up quite as much, I haven't gotten upset and I haven't yelled once - huge improvement from the past couple of days.

I hope you find comfort in realizing
1) You're not alone. We all have bad days, we all fall short.
2) As frustrating as it can be sometimes, parenting is a multiple choice, multiple correct answer "test", if you will. We rarely answer all the questions the same as another family but that doesn't mean it's wrong for us/our kids. and,
3) We don't have to be "perfect parents". We just need to unconditionally love our kids and do our best to lead them down the path of righteousness. God's Will will prevail and His perfect work will be done in all of us. Us as parents and our children.

Philippians 2:13

"For it is God who works in you, both to will and to accomplish, according to his good will"

If you're like me, you probably struggle often with feeling like you're messing your kids up, even when trying your best as a parent. But I pray this verse gives you hope, as I'm holding onto it myself. God lets all of us, including out kids, go through what we need to in order to fulfill His purpose in and through us, throughout our entire lives.

Jeremiah 29:11

"For I know the plans I have for you, declares the Lord, plans for welfare and not for evil, to give you a future and a hope."

Obviously, I'm doing better today, and again, if you wanna hear about what I'm doing differently you can check it out HERE. Realize however, that just like there's no one right answer for all parents and all kids, there isn't necessarily only one right answer for a family. Life changes, people change and parenting styles/methods can and sometimes should change from one day to another.
Keep an open, loving and realistic mindset and give yourself and your kids some grace. We will all be happier for it ;)

Journey to Veganism: Day 1

I talked to Jason last night and I got him on board! He wasn't real thrilled with the idea of going vegan, but he decided to give me/veganism a 1 month chance. haha
I realize that after the first month we might go back to buying meat and dairy (though only from a local farm where we can see how they're raised, treated and prepared)
And Jason realizes after a month that veganism might actually be for us and something we as a family choose to live by. ;)

I had just gone grocery shopping a couple days ago so we still have a lot of stuff that isn't vegan, but we're not gonna be wasteful. We'll go ahead and eat what we've purchased and replace it with vegan options as we run out. Once we've finished up everything, we'll officially start the vegan diet!

We wont be 100% Vegan, however. I will still use/consume local honey. I know some real vegans are probably freaking out right now, but oh well.. My reasons for going vegan don't make me feel as though honey is something I should/need to give up. However, if you can contact me/comment below with sound health, economical and/or ethical reasons, I am open to reconsidering my decision.

Journey to Veganism: Intro

I am disgusted!

Great way to start a blog, right? Alright, so perhaps not the best intro, but it's the truth. I am absolutely disgusted! And I hope by the end of this post you are too!

I've dabbled in vegetarianism and veganism before, both for health reasons and somewhat environmental reasons. But I've recently began researching more into both and have decided to make the switch.

I'm going vegan!

And I'll tell you why. (Please keep an open mind then feel free to come to your own, educated conclusions.)

Many people choose veganism for several different reasons. Some choose it for health (to lower cholesterol. blood pressure, ect), some for environmental reason, and others for the love of animals.

I'll be honest, I'm not an animal lover. I'm not an "animal person", I never have been.

However, I am 100% against animal cruelty!

So I'm making the switch because I care about the health of me and my family, the health of the environment and the well being of all living creatures.

I don't believe that it's okay to manipulate a living being for profit, to electrocute animals into shock to slice their throats, to put them in living quarters so cramped that they can't even stand of expand their wings, to remove their beaks (without any anesthesia I might add), or to castrate little boys (again with no anesthesia), to take babies from their mothers or to skin these poor things alive!

Our world has become so greedy that we put profit above LIFE! And I am NOT okay with that!!

I hope, if nothing else, the reasons I listed above make you angry enough to make a change! Words never helped a situation, actions do! You get to choose weather you're going to help this situation or aid the murderers and torturers.

If you still don't care about the lives of these poor animals, then consider the earth.

"Animal agriculture takes a devastating toll on the earth. It is an inefficient way of producing food, since feed for farm animals requires land, water, fertilizer, and other resources that could otherwise have been used directly for producing human food." - Vegan.org

Think of all the trees that are being cut down to make room for the mass crops needed to feed the industrial, manufactured animals/byproducts (chicken, beef, cheese, milk, ect.) and all the natural habitats being destroyed/stollen from the animals.

Don't care about our planet either? What about your and your family's health?

Animal byproducts is a leading cause of heart disease, obesity, high blood pressure, high cholesterol and cancers, and not just the chemicals that are pumped into the animals but the animals themselves are not good for us. Click HERE to read about many healthy benefits of a vegan diet.

I could go on and on and on about this subject but I'm gonna send you HERE to watch The Best Speech You'll Ever Hear as Gary Yourofsky has already said it all so eloquently.

It is a little over an hour long, so a bit lengthy, but SO worth the time! Very informative and eye-opening.
(Just FYI: I don't agree with his stance that humans and animals are equal. On the contrary, I believe (as the Bible states) that humans ARE superior to animals as we are made in God's likeness. However, my stand is on that it is NOT okay to abuse our superiority for profit or sport.)

Daily Blog 14: Crazy & Busy

Tuesday 11/29/11

I hate I haven't updated in a couple days. It has been a little crazy around here. Sunday night I was exhausted and Jason and I needed to talk about some things, so I thought it was more important I spend that time with him rather than blogging - and I don't regret it. We had a really good chat. :)

Monday morning I went to work. I got home around 3, like normal. Jason went to work an I got to be home with my Baby-Bop, Gavin :)
That night we had a "family emergency" arise and my mom and I jumped in the car and drove out of town. We left around 10:15p and arrived around 1a. After talking to doctors and everything, we finally got to the house and got to bed around 4a. I got to sleep around 4:30a, mom didn't sleep at all.
We woke up around 6 or so this morning, got ready, and headed back to the hospital.
It's currently 10a and it has been a long day.

I think we're gonna try to catch a nap before heading back up to the hospital.

Dinosaur Party Decorations

The decorations for the party were very simple!
We used some balloons - mainly blue and orange since those are Gavin's favorite colors right now - and some toy dinosaurs (some of which were Jason's when he was a kid, and others I bought for the party)

We blew up some balloons for the mailbox and front porch:

I didn't have enough orange and blue, so we just used random colors for the mailbox.

We served Spaghetti Pie and salad for lunch, since the party was 12p-2p. We had water and soda available to drink. And had cake for dessert. Very easy! And didn't cost much. I would definitely suggest considering some sort of casserole, if you plan on serving a meal at your party, if money is tight. It is cheap, healthy and yummy!

I bought blue paper plates, orange cups and orange napkins from the dollar store for a dollar a pack.
We just used our forks, since we have plenty.

We taped orange and blue balloons to the arch between our kitchen and living area, above where Gavin opened his gifts.
(I would have added more but didn't have enough of these colors - I think it turned out fine though)

Lastly, we had a dinosaur cake and placed toy dinosaurs around it.

It was very easy, quick, cute and inexpensive. You don't need to spend half your party budget on decorations. :)

Dinosaur Birthday Cake

I used a basic Yellow Cake recipe from Better Homes and Gardens.
Gavin's favorite color right now is orange, so I added a little red and yellow coloring to make the cake orange. I also added 4-5 drops of Sweet Orange Oil for a little something special.

I used a homemade Chocolate Frosting, omitting the coffee and adding a splash of vanilla and only using 1/2 stick unsalted butter.

I used two 8 in. round cake pans (although, 9 in. would have been better, but 8 in. is all I have)
I used a bowl to measure the top layer then cut around it. (Making sure, before cutting, that my topper fit nicely within the smaller circle)

Make sure you put a crumb coat on before frosting your cake. Add your crumb coat frosting to a separate bowl or cup to ensure you don't mix crumbs into your good frosting.

Cake decorations:

I bought the candles from the dollar store.

I mixed the vanilla, butter and cream cheese together thoroughly in a large bowl before separating out what I needed for the blue (which I used for decorating)

I love how the cake turned out! It was really easy, but looks kinda fancy - I think :)

Finally, with candles lit and singing Happy Birthday!

He was so excited to eat the cake! Too bad I didn't capture his facial expression.

Dinosaur Party Favors

For Gavin's 2nd Birthday Party we went with a Dinosaur theme. We invited just family and close family-friends. There were only a couple of kids there; Gavin and his two cousins.

For favors and activities, we started with a trip outside to hunt for dinosaur eggs!

I used leftover eggs from last Easter and bought 3 packs of dinosaurs (10 in a pack) from the dollar store for $1/pk

They all found eggs so they each got a prize!
(They would have gotten one anyway, haha)
The prize was a little box full of dinosaur stamps and dino-shaped Silly Bandz

I purchased both the Silly Bandz (2, 24 pks.) and the Stamps (1 pk.) from Amazon.

It was easy, simple, fairly cheap and the kids LOVED it!

Daily Blog 13: Gavin's 2nd Birthday Party!

Saturday 11/26/11

Today was long and exhausting but a lot of fun as well! We got up and got busy finishing up a couple of last minute things for the party. Jason blew up some balloons and Gavin and I went and placed them outside.

Gavin's family came over to celebrate having him in our lives for the past two years. I made Spaghetti Pie for everyone and my mom brought a salad.
After lunch, most of us went outside for a dinosaur egg hunt!

They all found some eggs so they all got a prize! (they would have gotten one anyway, haha)
They got to keep the dinos they found and they got a little box with dinosaur stamps and dino silly bandz!

I made a two-tier, yet very simple, dinosaur cake - since his party was dino-theme.

I'll have posts with all the party specifics in more detail later.

During and after singing Happy Birthday, Gavin laughed so hard it looked like he was crying. haha Then he fell on the floor and started rolling all over the place - he was so excited!

After cake we opened presents!

Gavin got a ton of gifts!
*Loretta and Paul got him a John Deere Tractor set (which was probably his favorite toy- haha)
*His Aunt Linda got him some cool coloring stuff and a Melissa and Doug dinosaur puzzle!
*His Grammy and Papa (Jason's parents) got him a swing set and converse hightops!
*His Uncle Brian got him a toy hamster and ball
*Miss Nancy got him a dinosaur train track
*His Grandmommy and Grandaddy (my parents) got me some great organizational boxes for his memorabilia and got Gavin an adorable puzzle with different forms of transportation
*And mommy and daddy (me and Jason) got him a Mr. Potato Head, Play-Doh, chapstick and gum. haha

He enjoyed all of his gifts and will have a ton of fun playing with them all!

Thank you so much to everyone who came, wanted to come but couldn't, who got him a gift, and who loves him! We are truly blessed to have you in our lives! :)

Daily Blog 12: Party Preparations

So Gavin's party is tomorrow! I'm so excited!
I have worked my little fingers to the bones this week getting ready for guests. I have to admit though, I've done great. I've got a lot done but I haven't gotten caught up in my perfectionist-ways - I've just been able to get stuff done and enjoy it, for the most part. haha
Even making Gavin's cake today; normally I would freak out at any little imperfection but today I didn't care. I just got it done and it turned out just fine! :)

I don't want to ruin any surprises so I'll have blog posts on the party prep and the actual party after tomorrow. I'm so excited to share it though! :D

While I was home cleaning my butt off, I mean, cleaning the house... Jason was working on my sisters car. He left home around 9:45a and here at 8:30p he's still working on it :(
Apparently the car was in pretty bad shape, so he really wants to get it fixed so it's safe for Amanda and her girls.
He works so hard, especially for the ones he loves :)

All three of us are pooped! Gavin didn't go to sleep (and before sleeping kept escaping from his room), until after 12a last night, and got me up at 6:30a - I hit the floor running.
I cleaned my bedroom, both bathrooms, living room, dining room, made tomorrow's lunch, baked and decorated the cake and did about 6 loads of laundry (and my mom came over to help and she did the kitchen for me) and I cut Gavin's hair - My back is really hurting now but I feel quite accomplished!

Well, I don't have much more to say.... we've all stayed very busy today - me cleaning and Gavin making messes. haha
Like I said, I'll update on all the party stuff later so keep an eye out for that! :)

Daily Blog 11: Happy Thanksgiving!

Thursday 11/24/11 - Thanksgiving!

Hard to believe it's Thanksgiving already! We're coming up on the end of 2011 and while so much has happened this past year, the majority is definitely worth giving thanks for.
I want to list a few (or not so few) things I'm so very thankful for this year, before I recap on our day :)

*Most importantly, for my salvation - possible because of Christ's ultimate sacrifice!
*Family (Immediate and extended)
*Friends and Church Family
*A home and all the provisions we need
*Abundance. God is always faithful to fulfill our needs and I'm so thankful that He often gives us way more than that
*For creativity, individuality and expression
*For my husband's job and me being able to stay home with our son
*God's perfect timing - even when it doesn't make sense to us
*And for so much more!

This morning we woke up, got ready and headed next door to my in-law's house. We got there around 11a so we could have time to hang out and chat, and help, before others arrived.
I met my mother-in-law's cousins Mike, Gordon and Gordan's wife Julie. They were all really sweet.
Aunt Linda was there - I love her! :)
We had a feast, of course! haha Tons of delicious food! A lot of chat and laughter.
Gavin didn't behave too well; mostly because he was just overly excited to be meeting so many new people. He stabbed Jason and me with his fork! Got Jason in the arm and me in the forehead!.... lol Crazy boy.

After going home for an afternoon nap, we headed to my parents house a little after 5p. Normally my parent's tradition is a mid afternoon feast on Thanksgiving, but one of my brothers had to work so they pushed it up.
We hung out before dinner. While mom and Amanda (my older sister) were finishing up dinner, I kept the kids in the living room where we told stories an acted goofy!

We sat down to eat around 7p and stuffed ourselves once again! haha
We had a lot of fun though, with lots of cutting up, laughing and a little picking on each other (that's just how we are.. haha)
By the end of the night, we had all made our way to the couches in a reclined position in attempt to ease the digestion.
And Jason had a little story time of his own. :)

I have to admit, this year has been a pretty awesome year and Thanksgiving rocked! :)

Happy Birthday Gavin!

    2 years ago today, Gavin was born into this world!
Fall/Thanksgiving has always been my favorite time of the year. Two years ago my excitement for this time of year grew more than can be measured by man. On Monday, November 23rd, 2009 at 2:56pm I gave birth to my wonderful, sweet, energetic, compassionate, loving little boy. We brought him home from the hospital on Thanksgiving day - best Thanksgiving ever! <3

    Today, the day before Thanksgiving 2011, I am so thankful - for so many things!
I'm just so thankful, that even though Gavin was not planned, God graciously placed him in our family, knowing the joy he'd bring!

    It's amazing how one can change when given the responsibility of a child, if they're willing to better themselves.
I wouldn't say I was a "bad person" or anything, but I sure did grow up a lot between getting married at 18 and having Gavin just after I turned 19.
He has taught me to love in a way I've never loved before. To give 'til it hurts. And so many other things.
Parenting is a journey, this is for sure.. and there are no guarantees, just as in life.
You have no control over your child(ren), who they will be, what they will do, who they will choose to marry, ect... but we have the greatest opportunity through parenthood to either set our child up for success or failure, in everything.
We get the choice of whether or not we teach them that career comes before family, we get to choose whether we teach them that love is conditional or unconditional, we are responsible for SO much.

    As hard as parenting can be, with all the ups and downs, all the unknowns, it is the most lesson-learning, most rewarding, most gratifying path life has to offer.
I'm not the best parent, but I LOVE my child and I am so incredibly grateful that God has given him to me :)

We are not a family that's big on giving gifts. We don't believe is spending money we don't have just because it's a birthday or Christmas. We do, however, enjoy giving gifts from the heart - whether bought or handmade.
So as little as it is, I knew Gavin would love it, so I bought him a pack of gum and a Lip Smackers soda pop pack of chap stick. haha And I was right - he loves it!

Daily Blog 9: Find something to laugh about

Tuesday 11/22/11

I was scheduled to work today, but after calling late last night due to a severe headache, I was told to stay home that I was covered. Of course I woke up with no headache... but that's okay, I was exhausted and it was nice to sleep in for a bit. When I get those headaches, ones as bad as last night, it just wipes my energy.

So today was supposed to be very productive, making lots of headway on the house; but what do you guess, almost nothing got done. I'm in the middle of some very tedious chores and that's overwhelming me, plus Gavin wasn't having much of letting mommy get stuff done.. so nope, not a productive day.
On the bright side, however, Jason has tomorrow off so he'll be able to help get stuff done and watch Gavin for me- which is great!

Speaking of tomorrow... it's Gavin's birthday! (But I'll talk more about that tomorrow ;)

Well, there's really not much to update on. Nothing exciting really happened today.
Gavin had some cute moments, like when he asked if he could have some chocolate milk. I told him, "No. But you can have some tomorrow... 'cause it's your birthday!" and he responded, "YAY, birthday!!" lol
Then when I put him to bed, he came to his bedroom door and was calling me saying, "Mommy, I need you," and then just, "Mommy.... mommy.... mommy.." in this pitiful little voice. Ugh! I wanted to get him up so bad, but I knew he was just playing me..

Gavin really enjoys reading books. While he can't actually read yet, at least not that we know of (haha), he is constantly asking Jason and/or I to sit and read a book to or with him. Neither Jason or I are big book worms, but I've always wanted my kids to love books, so I'm verrrry happy that he does! <3

One last thing I figure I might as well share is, earlier this afternoon, after Gavin woke up from his nap, he came into my room to get me. He crawled on my bed next to me. I asked if he needed to go potty and he said 'no' - okay. Usually he'll go if he needs to so I thought nothing of it.
Well moments later he begins to pee all over my bed - making a huge puddle!

I was telling him, "No, stop! Stop peeing!!" then with a slight adjustment, I presume in attempt to stop, he peed all over ME! I was mad at the time, but looking back it was really rather funny! hahaha

I guess that is what life is all about though, isn't it? Facing it (life) head on and then finding something to chuckle about at the end of the day :)

Daily Blog 8: Headaches

Monday 11/21/11

So this is going to be a quite a short post. I have a horrible headache and just need to go to bed, but want to remain faithful to my Daily Blogs, so here I am.
I worked this morning from 8:30a-3p, as soon as I got home Jason left for work, and Gavin woke up from his nap. I started getting a headache 1p, or so. Here it is nearly 10p and it has only gotten worse.
Earlier this afternoon, however, I fought through the pain for a bit as I played with Gavin outside.
At one point he peepeed in his pants and told me, "I be right back." as he headed to our house. lol
When I began to follow him he put his hand out as if to say "stop" then proceeded with, "I be right back!" lol He's too funny.
After dinner, my headache was even worse. Gavin went over to his Grammy and Papa's for the evening. Instead of being able to use that time to get chores done, however, I was stuck laying in bed.
Well, I'm still in bed, but really needed to post this...
So that was pretty much my day today, in a nut shell. Hopefully I'll be feeling better tomorrow so I can get more work done around the house and post in a little more detail about my day. But as for now, I'm heading to bed!

Here it is, 1:30a and I'm up and feeling sick. I broke down and took some meds for my headache around 10:30p and dozed off at 10:45p. I was awoken by Jason's phone call letting me know he was on his way home from work and about 11:10pm.

You know when you take a short nap during the day and wake up feeling worse/more tired than before... well yeah, that's what happened. Partly due to the medication I took to relieve my headache, my iron supplement and multivitamin I took with juice. So not only did I feel gross after waking up from a short nap, I felt sick and had heartburn too.

So like I said, here it is 1:30a and I'm still awake, only this time, instead of a headache, I can't sleep because I'm feeling sick.

Between working and coming home to a headache that only got worse by the hour, I feel like today was a complete bust, as I got nothing done! And in a way, I feel like a failure too... but that's another issue. haha

Well, I guess it's back to head-to-pillow time to try, once again, to get some sleep.

Daily Blog 7: Running around like a chicken with my head cut off

I'm not sure if I'll have time to get to this later tonight so I figured I'd just check in quickly and update on my day so far.
It's 5p now, I just got home about 10 minutes ago. I was out most of the afternoon running errands. Gavin's Grammy got a gift card for some shoes so we had to go get him resized and pick those up in time for his party this Saturday. He picked out a pair of black & white converse hightops (that's my boy! :)
He was pretty clingy once we got out of the house, but that wasn't too bad. It wasn't until after we left the mall and got to Target that he got fussy. This was greatly my fault though, as I thought he had taken a short nap while I was showering and getting ready, but he hadn't.
So we got to target to get a couple things we needed. Then stopped by Harris Teeter for a couple of groceries.
I am pooped! And so is Gavin. haha. He is down for a short nap. Poor thing was so exhausted, and really did a good job, considering.

Well, as I've mentioned before, I've been working on some VERY LARGE projects around the house (and don't ask me why I decided to wait until about a week before Gavin's birthday/party to completely reorganize 5 rooms....) so I've almost finished the Craft & Storage Room, just need to tie up a few loose ends. Then I have two couches full of laundry to fold, iron, hang and put away once two other rooms are organized, so they have a place to go. Plus, I have to work tomorrow and Tuesday, Gavin's birthday is Wednesday and Thanksgiving is Thursday. I really don't have much time! AGHHH!! haha But I CAN and I WILL get it done!

Heading out to run errands. Gotta love messy hair. CHEESE!

If I have time, I will post about this evening later on tonight..

Well, it's about 10:30p. I got a lot done, but still not enough. Oh well. I have tomorrow evening to make some more headway.
Jason didn't get home until nearly 7p. and after Gavin's 5p-5:40p nap, he was ready for some play time! Although Jason and I were/are both exhausted, we had some very enjoyable, much needed family-time. :)

Gavin has an oversize stuffed bear that he named John Bear (like John Deere, 'cause when he first got the bear he put his John Deere hat on it all the time. hehe) Gavin is so attached to that bear; it's cute and funny!

I got the bear and hid behind it acting like the bear was talking and Gavin started to crack up.

He thought it was SO funny!

I just love his innocent, sweet sense of humor!

There were numerous other moments of this sweet boy and the memories we are forming as a family, but I don't have the time it would take to pour every drop of me heart out. Fortunately, God made us in such a way that we get to hold onto these memories, written or not. <3

Well, it's late and I have to work tomorrow, then come home and keep cleaning/organizing... It's gonna be a LONG week between the duties I have here at home, Holidays and Gavin's birthday, but it will be nothing but a blast once I hurdle myself over the obstacle of reorganizing everything. haha (I know, I know... real smart starting it when I did. Oh well, we live and learn. haha)

Daily Blog 6: Love, Hugs & Chores

    It's about 7:00p now, as I write this post. My past several Daily Blogs have been written around 11p/12a, but I have ventured to test an earlier TOE (time-of-entry).

Today has been pretty good. Ups and downs- mainly with me and my attitude, but as of now all I can do is smile. As I mentioned, I believe it was in my last post, Gavin has not been behaving the best and been VERY hyper lately. But the past two days he's been an angel *knock on wood*

My attitude has been up and down because I've been letting stress and overwhelming circumstances get the best of me.
A good example is that of today's To Do List. As Gavin's birthday/party and the holidays are approaching, the many chores that fell victim to procrastination have come back to haunt me. We have been slowly rearranging the entire house. We moved the "dining room" to a corner of the living area and moved my office into the dining area. (Sounds odd, I know. You'd have to see it.)
    We have a 3 bedroom, 2 bath house. My husband and I share the master bed/bath, obviously, and since we only have one child currently, he has one room while the other is used for storage, craft and office work. Since we moved the office out of the third bedroom the items in need of storage space seem to have increased drastically.
I am turning that third bedroom into the Craft & Storage Room for the time being, and to do so everything had to come out, get organized and be put back in there -among other items that were not already in there.. haha
It has been a chore to say the least!

However, despite the feat I was faced with, sweet little Gavin was right by my side to help. And the best part is, he actually helped! He moved a lot of stuff out of the room for me while I went through other things. I was surprised and quite happy to see this at such a young age. :)

After helping, Gavin went outside with Daddy to play in some more leaves! And of course, I had to capture it!

This evening, Gavin and I were playing in the living room. We will run around chasing each other and Gavin has gotten where he'll stop mid-run and tell me, "Stop. Not running." with his hand out. haha He's so cute.
Then we were spinning in circles. He loves to spin and likes to start his Daddy and I spinning with him.
After I spun around for a minute I stopped and he looked at me and said, "Nice job!" haha He has just been so sweet the past couple of days!
I love his hugs and his kisses, and when he obeys when he doesn't want to just because I ask him in a calm voice and he loves and respects me.
I have needed this reassurance lately! Thank you Lord for giving us what we need, when we need it - however big or small! <3

I am counting my blessings! I pray your heart is as blessed as you go about you weekend. May you feel God's loving and gracious hand upon your life!

Hearty Breakfast Casserole

12 Eggs
2/3 Cup Milk
Salt, pepper, Thyme (or any other herbs and spices of your choice), to taste
Honey, Agave Nectar or Maple Syrup (Optional)
8-16oz. Ground Sausage (flavor of your choice)
6-8oz French Bread, cubed
1 Bell pepper
1 small Onion
1 Can Mushrooms
1/2 Cheese

This is a VERY easy, very versatile recipe. Use this as a guide and make it your own then comment below and let me know what changes you made and how you liked it! :)

Brown the sausage, set aside.

While Sausage is browning, cube French Bread.

Once Sausage is done browning, set aside. Using the grease from the sausage or adding Olive Oil to the pan, slightly toast bread- just 'til golden brown.

Grease 8x12(ish)/3 Qt. Casserole dish with olive oil. Add toasted bread cubes to bottom of dish.

Top bread with browned sausage.
Using as much or little as desired.

Layer your vegetables (of choice) on top. I used 1 can of Mushrooms, 1 Bell Pepper and 1 small Onion.

Top with about 1/2 cup of cheese.

In medium bowl, mix together: Eggs, Milk, Honey and Herbs & Spices of your choosing. Pour over top previously layered ingredients.

Finally, bake on 350 for about 25 minutes, then set oven to broil for an additional 2-5 minutes (depending on desired texture on top).
Let cool for about 15-20 minutes before serving, and enjoy!

Keep in mind that this is a feast!! You can certainly 1/2 or 1/4 the recipe - the directions above make about 16 servings.

Daily Blog 5: Fabulous Fall Day!

Friday 11/18/11

Today has been great. Nothing major has happened, but it has just been so pleasant.
Gavin has been the sweetest little boy today. Wanting to hold me and play with me, but not being so clingy that if I step away for a minute he's screaming.

Jason went outside to hunt. He has wanted to get a deer, so bad, all year. In fact, he said he's never shot a deer before. Well, he shot two today! While I'm not a fan of hunting, I am proud of him :)

He say on the floor in the living room this morning with a book, then patted his lap saying, "Lap"- as if he wanted me to sit on him. haha So cute.
Gavin and I went to his room to play but instead he said, "Blocks. Clean up!" then proceeded to pick up almost all the blocks and put them away, I only helped a little. He is getting to be such a big boy!

I can't believe his Birthday is Wednesday (day before Thanksgiving) and his party is 8 days away!
I have SO much to do around the house to get ready, and just because it needs to get done. It's overwhelming honestly, but hopefully I will succeed in accomplishing it all - 'cause I'm Super Woman! ;)

While Jason was outside skinning the deer he shot (Eww), Gavin and I spent some time playing in the leaves!

We spent about an hour outside. Although it was COLD, we had A LOT of fun! He has been SO sweet today! <3

This afternoon, we went to my parents house to hang out and eat dinner. Jason went hunting with my younger brother Richard (who shot a deer as well!)
We were there from a little after 4p until 10p! (We wanted to leave between 8 and 8:30, but lost track of time) That's okay though, I hadn't seen most of my family in a while, so it was nice to sit down and chat with them.
I was also invited to see Breaking Dawn with some friends tonight, but the showing was at 10:15pm; I haven't been feeling good (all three of us have had some sorta of tummy bug the past few days) and I would have been up WAY too late considering I have so much major stuff to do tomorrow. Speaking of which, we're clearing out the entire office/storage/craft room and completely reorganizing it! Plus I have to finish switching mater closet and bathroom things around.. But anyway. It was nice to be invited out, though, and I would have gone had I not been so tired.
I'm still exhausted, but I'm waiting for tomorrow's breakfast to finish so I can put it in the fridge before I pass out- hence my blogging this late tonight. :)

All in all, today has been a fabulous day! I've enjoyed family, good food and God's presence- Can't ask for more than that :)
And can I mention again how sweet Gavin has been today? I think I can. He's been SUCH A SWEETHEART! :) haha
He's had a few moments of frustration, but overall he's been respectful, kind, loving and even shared toys. I know I've had a hard time with him the past week or so, but today was worth it all! I love that little man with all I am! (Even on the bad days ;)

This isn't going to be much of a "blog". Truthfully, after this evening, nothing that happened today really matters.
I've been feeling distant from God. Why? Not because He has left me, I know this. But because I'm not pursuing Him. This will always lead to a gap in the relationship. And we often feel as though God has left us, but when we feel that way, it is really just because we need Him more than usual and need to press into Him.

Daily Blog 3: Personalities and Gas

I had to work again this morning. Had my alarm set and ready. Turned out not to matter as a ready-to-go little boy woke me up nearly 2 hours earlier than I needed to be. haha
Oh well. We ate breakfast, played in his room and spent some time together before I headed to work.

(I'm trying to figure out how to blog about my life; good and bad, without disrespecting anyone, so please bare with me)
We dealt with some attitudes this morning.
After this past weekend being SO PERFECT, it's hard to deal with moments like this morning- but that's life.
We are all human and all have things we need to work on to improve, and unfortunately, sometimes we don't choose to work on specific issues, realizing or not, that it affects those around us (and often hurts the ones who love us the most)

I read a couple verses before leaving this morning, and then posted this to my facebook:

It is easy to get angry and take it out on our children. It's easy, in such a state, to bring them to anger- but God says this is SIN. Parenting is not easy, it's a job; a hard job, but one worth doing and doing right!

"Fathers, do not exasperate your children; instead, bring them up in the training and instruction of the Lord."- Ephesians 6:4

In all honesty, I have not done the best job as a parent the past week or so. I've been overwhelmed and even burnt out and it takes it's toll on mine and Gavin's relationship. It hurts to know and admit that as well. :(

It is just difficult, even still, dealing with a partner. As with every relationship, we have different parenting styles, differing methods for dealing with conflict, ect. It's hard trying to figure out your child and the best way one sees fit to parent them and then compromising with your spouse without compromising your child's training/upbringing.

But I'm sure one of these days we'll get it perfected! ;) (haha NOT)

Otherwise, today has been pretty good. We've all been dealing with stomach pain, however.

Mine has felt more like some gas and my reproductive organs tying themselves into knots. Gavin has gas. And Jason ate something too hot that is now giving him heartburn and stomach pain. :(

Because Gavin's tummy hurts he keeps waking up. So far, here it is at 12am, he has fallen asleep about 4 times tonight and woken up within 30 minutes every time.

He wants to sleep, but isn't feeling well :(

Yeah, normally sleep depravity would frustrate me, and it may begin to in a few hours- haha, but I'm really just more upset that my baby can't sleep. .....now the sound of rain is scaring him... It's going to be a long night.

At least there are no more Tornado watches or warnings in effect for our area!... haha

I was planning on taking Gavin to a MOPS meeting tomorrow, but don't know that either of us will feel up to it by morning. We shall see. It would be good for Gavin to get out and play with some other kids.

He needs some smaller, faster, more abled bodies to keep up with his energetic self! ;) haha

Well, I guess that's about it for now. I'll just quickly end with this:

If you and your partner are struggling with communication and/or parenting styles, don't be afraid to seek counseling. You don't even have to go to a "therapist", just find an older, married couple whom you both trust and admire. Get some advice. And know that it takes time, it takes work and it takes patience. Keep an open mind, a loving heart and think before you speak ;)

I bought the adhesive, just double sided tape, from Food Lion.

Tuesday, 11/15/11

Not much happened today. I awoke late for work, feeling sick. I took a quick shower and left just as quickly. (I sit with an elderly lady a few hours a week. It's a good job; easy and I can take Gavin with me, but it's boring, to be honest.)
So my fast paced departure landed me sitting still for nearly 6 hours today. (Not that I actually sat for 6 whole hours, but you know what I mean- it's not like an 80 year old is all that active.)

When I got home Gavin was still napping. After having watched the Steve Wilkos show on child abuse today, I just wanted to hold, kiss and tell Gavin I love him. But I let him sleep a little longer. Well, when I finally woke him up, he was grumpy!
Turns out he's just clingy and wants to be held, probably partly caused by his teething. But if I'm not holding him, or holding him "correctly", he screams and cries. Just nerve wracking.

For the most part, though, today has been pretty chill. Besides Gavin's screaming after awaking, I'm doing better than yesterday.

So Gavin's birthday is on the 23rd, so only 8 days away. His party is the 26th, so I have 11 days for that.
I spent some time this afternoon/evening ordering last minute things for the party and trying to figure out what I want to serve for cake and what not- but I'll have a whole other post on his birthday planning once the next couple packages arrive.
We're doing a Dinosaur themed party because he's been really into dinos lately, especially "Triceratops" ;)
I've got most everything figured out, however, now I just need to figure out what I'm serving for lunch.

On top of birthday planning, I'm trying to figure out Thanksgiving and Christmas.
We want to start our own family's tradition of A Week of Thanksgiving, which will have an event or activity centered around a particular element of Thanksgiving each day of that week (Monday before-Sunday after)

So just lots to figure out in short amounts of time, but I'll get it done. It may not be perfect, or the way I want it, but it'll happen and I'll just have to get over it. haha

Well, I have to get up for work in the morning, so I'm gonna head to bed so I can wake up rested.

Daily Blog 1: Stressed and Overwhelmed

So I've decided to start trying to blog everyday, about my everyday.
So here's my start- Unfortunately, not a very pleasant one.
But this is the life of a SAHM (stay-at-home-mom), or any mom for that matter.

Monday, 11/14/11

Today has just been one of *those* days. It started with a grumpy daddy, an overly active toddler and a tired mommy.
I love that Gavin is an active, rather than lazy child, but some days I just can't seem to keep up with him; much less everything else I have to do.
I'm overwhelmed with all that needs to get done and stressed with how nothing seems to be getting there; done that is.

I finally started making headway this afternoon.
And this afternoon..... Gavin got up from his nap and I suppose he decided it would be a good idea to pour Cascade Rinse Agent all over himself and the kitchen floor.
I rushed him to the bathtub to wash him off and rinse out his mouth, not knowing if he had swallowed any or not.
After washing him thoroughly, I went back to the kitchen to begin washing the floor (keeping a good ear out for him).
Not a minute later, a dripping-wet toddler is standing in my hallway, and before I can get to him (much less get him back into the bathroom) he vomits!
My first thought, of course, was of him. "My poor baby!" I tried to comfort him, then he threw up a second time.
(Yes, I had thought to call Poison Control, but at this point it had slipped my mind)

After the second time, he seemed to be doing better- as though he was done throwing up. I quickly went to get him some water to wash the taste out of his mouth and dilute any remaining agent in his system.
I put him back in the tub, got him washed off and left him in there to play as proceeded to steamvac the carpet. (The hall, where I was vacuuming, is right in front of the bathroom door. I could see him the whole time.)
However, I couldn't get that done as Gavin decided that this one time he didn't wanna play in the tub.
I get him out of the tub and dressed and moved to the living room so I can clean the carpet, to find that the last person to use the steamvac had not cleaned out the tank... so now my hallway and bathroom smells like vomit and POOP!
Grr...

I finally got everything cleaned up. Everything from the rinse agent incident, not "everything"....

I've just been feeling like this is "life" lately. As if there's no catching up, getting ahead or place of rest.
Some moments I just want to run away, and I hate feeling this way. I hate feeling like I would rather be somewhere relaxing than at home raising my son. I'm struggling with feeling like a failure 'cause it seems NOTHING in my life is perfected- it's just frustrating.

The one thing I hold on through all the ups and downs, however, is:

God is our refuge and strength, an ever-present help in trouble...

God is within her, she will not fall; God will help her at break of day.

He says, “Be still, and know that I am God..."

The LORD Almighty is with us.

Crocheted Earring Frame

I used a beaded picture frame my sister gave me to make an earring holder. I LOVE how it turned out!

This isn't much of a "tutorial" but hopefully it inspires you to let your crafty side come out! :)

I started with the picture frame. Removed the backing, glass, ect.

Using thin yarn (used to make Doilies), I attached yarn around the backside of the frame (just on the outside of the picture opening).

The method(s) used will vary greatly depending on personal preference and the frame(s) being used.

Done threading the frame. Now to begin the crocheted piece on which the earrings will hang!

Again, this is a crocheted piece.
I began working a chain nearly the width of my frame opening.
(A chain or two short is fine as when it's finished and you attach it to the frame the crocheted piece can be pulled taut.)
I used half-double crochet (HDC) on the top and bottom of this piece for stud earrings.

For the middle, I chained three and single crocheted in every other base stitch, creating small scallop-like stitches (great for hoop/hook earrings).

Then I used HDC again on the bottom of the piece, for more studs and/or just for decoration.

I then attached the top and bottom to my frame. After which, I proceeded to secure the sides.

*I would definitely suggest doing it this way, rather than starting at one corner and working all the way around, as to not create a misshaped centerpiece- especially when you're working with a design with obvious lines.*

And Done! Now just add your favorite earrings! <3

11/11/11 - 4 Year Anniversary!

Jason and I began dating on November 11th, 2007.
So yesterday, November 11th, 2011 (11/11/11) marked our 4 Year Anniversary!

Believe it or not, we've been dating for 4 years and married for nearly 3 years and this was the first Anniversary we've celebrated since dating for 3 months! haha
It was LONG OVER DUE! :)

We went out the Southpoint for an appetizer and desserts at The Cheesecake Factory. We had a 1 hour wait, so we decided to use this time to walk the mall, instead of just sitting and waiting.
We went to Reed's Jewelers to get our rings cleaned (which is where he bought my engagement ring and matching wedding band) I even tried on another ring- it was SO pretty! :)

Then we walked across the way to Bath & Body Works. We had fun smelling all the Holiday (Fall and Winter) candles!
My favorite was the Dark Chocolate Mint and Jason's favorite was the Winter Cabin, although, we could have easily walked out of there with every Holiday scent! :)

After our fun there, we headed back to the restaurant and right before we got to the door our buzzer went off (those things they hand out to you when you're waiting to let you know they're ready to seat you)- it was perfect timing!

We ordered the Warm Crab and Artichoke Dip to start, ate way too much bread (haha), then Jason ordered Kahlua Cocoa Coffee Cheesecake and I had the Pumpkin Cheesecake. SO YUMMY! :D

Afterwards, we headed to Target to pick up a couple things we needed and had fun there too! haha

It was really a rather simple date, but one of the best times I've had in a LONG LONG while! We had a blast!
It was sweet and romantic, we got along the whole time, lots of kissing and holding hands, talking and gazing into each others eyes.
It warmed my heart! Last night was truly a time I'll forever cherish <3

As we've all heard, and many of us have experienced... guys aren't real good with hints.
We know this! So why do we get so upset when our husbands or significant others overlook something?

This "overlooking" is because men and women are wired differently.
In general, most guys do better, understand more, with written word.

We as women tend to feel hurt by our husband's "selective hearing" thinking that it has something to do with their lack of love for us.. and guys joke as if that's it (and for some really rude guys this is the case) but for the most part, men don't hear most of what women say because that's the way God made us! (don't ask me why.. haha)

Instead of fighting it, or allowing it to hurt us and get in the way of our relationship's growth, let's recognize this reality and figure out how work around it.

While this applies to most areas of our lives, today I'm talking about WISHLISTS!

As Christmas gets closer, most of us are probably putting more time into wishlists. But why just make wishlists for Christmas and Birthdays?

Why not keep a running wishlist all year long?
Make one and keep it available in case hubby wants to take a peak at it for a surprise (but don't shove it down his throat)
This makes shopping so much less stressful and eliminates those pesky "Will they like it?" or "Am I spending X amount of money on something that wont get used or be enjoyed?" type of thoughts :)

Some people think that wishlists take the fun out of shopping/present giving, but what's fun about spending money on something the receiver wont like or use?
And if you're like me, it's no fun shopping when you have little money and don't know what to get the person! Besides, it's fun to "wish" and everyone loves when a wish comes true!

So make life easier for the one's shopping for you, make a list and keep it handy for the whole year... just in case hubby wants to surprise you! ;)

Safe Skincare for Pregnancy

Though I am not pregnant, nor am I trying to get pregnant, I'm still in my child-bearing years and I try to live my life in a safe, healthy way

(as if I were pregnant, so if I become pregnant without knowing, I wont harm my baby).

Our Preparations for Home Schooling: Schedule/School Year

It is now October 23rd. Gavin, our son, will be 2 in one month!
Since we have decided to home school, Jason and I have been discussing educational methods, schedules, ect. for a while.
We are in the process of planning our "preschool" years; figuring out which method(s) will work best for our family, what type of schedule we want and foresee using, ect.

We realize plans may, and very probably will change as we move forward in this journey, and especially as Gavin gets older.
At this point, we plan on beginning our school year in January. Our reason for the following schedule is to give us good structure while giving us enough leeway-time for spontaneity and flexibility.
Of course, as Gavin is only 2, the schedule is not that strict- honestly, it is more for me, the teacher, than anything.

Our Planned School Year:
First week of January - End of October (perhaps even a week or two into November)
Taking most (or all) of November and all of December off.
2 Free weeks- 1 week off in Spring, 1 week off in Summer.

(We chose a more year-round schedule to reduce review time. Also, we chose to take the majority of time off around Gavin's birthday and Holidays, for obvious reasons, and because our family LOVES Fall and Winter!)

I realize this is only 8-10 weeks off in one year. Like I said, this schedule is mainly for me at this stage in our home schooling. Gavin is still so young that most of his "schooling", education, comes from normal, day-to-day activities- learning through life. It is not like he'll be sitting in a chair, studying books for 8 hours a day for 42 weeks of the year. haha

So this is the schedule we plan to start with. Next, we choose our method(s) of operation! :)
We've been researching different methods and approaches and have an idea of what we want to do, but I'll cover that later.

Coffee Cupcakes

1 Stick unsalted Butter
1 1/2 Cups packed Brown Sugar
4 Eggs
2 Tsp. Vanilla extract
2 Cups All-Purpose Flour
1 Tsp. Baking powder
1/2 Tsp. Baking soda
1/4 Tsp. Salt
1 1/4 Cup Water
2 Tsp. Instant Coffee
2 Tsp. Cocoa Powder

Preheat oven to 350. Prepare cupcake tins by greasing and/or lining with paper cups.

In large bowl, bring butter to room temperature. Cream butter and sugar. Add eggs and vanilla. Mix thoroughly.
Sift in flour, baking powder, baking soda, salt and cocoa powder.
Mix instant coffee into water.
Pour into batter and mix well- don't over mix!

Fill cupcake tins 2/3 full. Bake on 350 for 20-25 mins. Baking mini cupcakes for 11-13 mins.

Let cool completely before frosting with Chocolate Coffee Butter Cream Frosting.

To Garnish:
*Sift on confections sugar
*or Drizzle with caramel topping

Chocolate Butter Cream Frosting

1 Stick unsalted Butter
1 (8 oz.) Package of Cream Cheese
4 Tablespoons Cocoa Powder
1 Pound Powdered/Confectioners Sugar (more or less)
(Optional) 1/2 Teaspoon Instant Coffee

In large bowl, bring Cream cheese and Butter to room temperature. Cream together until completely combined and smooth.
Add Cocoa Powder (and Instant Coffee). Combine.
Gradually add confectioners sugar until you've reached desired consistency.

Top your Coffee Cupcakes and enjoy!

My son left his black and brown braided belt on my bed. While I was watching youtube videos I picked up the belt and began to wrap it around my wrist. What was a moment of "too tired to get up and put it away right this second" turned into an "Aha, this could actually work" moment. haha

If you're into chunkier pieces, mixing colors and textures and like hardware, consider picking up a couple kids belts (or borrowing one from your son ;) and using it to accessories your own outfit :)

9/11 ~All Gave Some, Some Gave All~

For those of us who were not directly affected by the 9/11/01 attacks through losing a loved one, it is easy to forget what happened from time to time. It often takes hearing a good old country song or an anniversary to remind us.
But for those who lost their fathers, mothers, brothers, sisters, sons, daughters and fellow firefighters, EMS, EMT, police officers, and military family, the 10 year anniversary of the attacks marks the 3652nd day they have remembered.

Let us not only remember the losses but what has been fought for, on 9/11/01 and until this very day. Thousands of lives lost yet mocked by those who don't understand, to keep our land free. They are heroes!!

Let us take a moment and remember all those who serve- past and present- and keep in our hearts and prayers the families and individuals reliving such a tragic time.

I want to say THANK YOU, to all our public defenders. To all our first responders,military personnel, and the ordinary men and women who step up when needed, you are who keeps this land free.

You are mocked, judged and bashed by fools who don't understand yet you keep fighting for what you believe in.
I apologize, on behalf of our nation, for taking you for granted all too often.
I want you to know, while I don't say it every time I see a uniform, I do thank each and everyone of you and pray for you often.

You are who America is about and I'm proud to call myself and American, BECAUSE OF YOU!

Spaghetti Pie

Jessica's Spaghetti Pie

6-8oz Thin whole wheat spaghetti noodles (or angel hair pasta)

10-12oz spaghetti sauce, of your choice (I used Ragu Six Cheese)

1/4 Cup milk

2 Eggs

6oz. Cheese (I used a Six Cheese Italian Blend- use what you like, add more or less if desired)

Optional:

Bell peppers, onions, meatballs, ect.

Make spaghetti as usual: Bring salted water to boil, add noddles and cook for about 8 mins. Drain.
Add spaghetti sauce.

Preheat oven to 400

In small bowl or cup, mix together 2 eggs and 1/4 cup milk.

Add to cooling spaghetti. Add cheese (reserving some for garnish)

Mix well and pour into a greased pie dish.

Top with remaining cheese.

Place in center rack of oven and bake on 400 for 20 minutes.

Let sit 5-10 minutes before cutting. Enjoy!

For dinner tonight (9/9/11) we had Jessica's Spaghetti Pie, baked sweet potatoes and green beans. YUM!

I hope you all venture out and try this recipe. It turned out way better than I thought it would, and I'll definitely keep making it for me and my family!

Long Time, No Update

Hey Guys,
Sorry it has been so long since I last posted anything. I've been quite busy lately and just trying to find my footing in my new responsibilities.
I hope to get back into a more consistent blogging routine- so don't give up on me! ;)

There's really not much to update on, honestly. Gavin's 2nd birthday is coming up soon, as well as Jason's 31st and my 21st, so I have been trying to prepare parties and what not for those upcoming celebrations!

Also, another reason I've been so busy lately, I have had many opportunities arise recently for different leadership positions. I'm trying different things out and praying about where all God wants me now, and perhaps later. I don't want to jump into too much too quickly and get burnt out and begin letting people down, so I'm taking this time for clarity very seriously.
But I am very happy with the doors God has opened and the different opportunities that have been presented! :)

Some friends of mine lost their dad/father-in-law this morning. While my heart breaks for them and I imagine the pain of losing a parent/loved one, it also makes me think of my time of passing.

What will it be like, how will I go, how will others remember me.

While some may think it's morbid to think of death, it is a part of life. And I think it's healthy to consider these things. Though it may be morbid to dwell on dying itself, how it will happen and such, I do believe we need to think about what we will be leaving behind when we go and what we want to leave behind- do they aline, if not then what do we need to do to fix that?

We should all consider the legacy we leave. How will others remember us? Are we leaving behind debt or lots of riches or are we leaving behind love and memories of grace and mercy? Will people think back on how we gossiped and stirred up strife or how we did everything in our power to relieve strife and bring peace to situations?

Thinking about how people will remember us when we're gone, I believe is healthy, because it can help us prioritize our lives and shape us into who we should be, rather than going through life with a warped mentality that leads to hurting others.

I just wanted to share a few songs with you:

This song causes me to think about the legacy I am making and the legacy I should be making.

God has called each of us to different things. We're all part of the body of Christ, but just like the human body, we all have different functions. I urge you to fast and pray and seek God for the calling He has on YOUR life! :)

It can be scary at first, but trust me, it is so empowering and freeing!

Lastly, I wanted to share a couple of songs that are so very close to my heart (for different reasons). The following two songs are those I want played at my funeral.

Again, I know some may think it is morbid for me to be thinking about what songs I want played at my funeral, but hopefully you will see where I'm coming from when you hear them.

I want my life to aline with God and I want to be remember for that. I want my funeral to reflect my life and give peace and hope to those who mourn.

Gavin had his 2 year check-up on December 6th. It went really well. Unfortunately, he had to get some vaccinations – Gavin didn't like that :( But otherwise, he did a great job!

Back from Gavin's 2-year check-up! He's 35.5 inches tall and weighs 28 lbs :)

Just realized that I'm making myself and my family miserable because of unrealistic expectations..... :) I smile because I'm happy that I've realized this and can improve it!

It's a bit late perhaps, but we've started Gavin on real/open cups instead of sippy cups.. and he seems to be doing really well! :)

We are officially going vegan on 1/1/12 - we are waiting until after the holidays for Jason ('cause I'm a sweet wife like that haha)So if after the new year we turn down your food, it's nothing personal/against you. :)

BAHAHAHA!! Gavin's chasing Jason around the house trying to poke him with a boogery finger.. lol - boys!

December 10th, Gavin and I went out (about an hour away from home) to get a little shopping done. We went to Michael's to get some stuff for a little Christmas gift and get a wreath for the front door.

I tell you what...... Saturday drivers in December are IDIOTS! I don't care how many people are in a freakin' parking lot... if you're not rude and selfish it shouldn't take 30+ minutes to get out!
